Here Oakley, author of the bestsellers Vegan 100 and Vegan Christmas, provides simple solutions to these questions by applying his usual creative flair to a collection of protein-packed recipes for busy people. Ranging from breakfast boosters and comforting soups to pasta (including lasagna), unusual burgers, big bakes, and delicious desserts, there is something for everyone, with some of the recipes taking only 15 minutes or so to produce. All the recipes are well-categorized, with icons for "gluten-free," "can-be gluten-free," or "one-pot meal."
