        In their third work focused on Mediterranean cooking, after 30-Minute Mediterranean Diet Cookbook, registered dietitians Ball and Segrave-Daly not only stress food that is good for one's body but also emphasize cooking practices that are good for the planet. These include eco-forward shopping, cooking, storing, and eating practices that focus on sustainable crops, seasonal eating, reducing food waste, and conserving resources while cooking. Dishes range from the unexpected, such as polenta with ricotta and apples, to the more familiar, such as spinach salad with goat cheese. Directions are clear, with prep time and cook time listed along with serving sizes. As fits a book focused on healthy choices, nutritional information is given for each dish. The authors stress they are not experts in the foodways of the Mediterranean but do unitize ingredients from these regions. Readers should note, therefore, that authenticity is not the goal. Recipe head notes indicate dishes suitable for vegetarians and vegans as well as those with food allergies. VERDICT While focused on Mediterranean ingredients, this reads and cooks as a general recipe collection.
